Cucumber dip with lemon, dill and pita

This refreshing dip makes a great summer picnic side dish or even a healthy fall appetizer. With cucumbers and yogurt, it’s a cool treat that’s good for your stomach, too. You can double or triple the recipe to accommodate more people.

Ingredients

  • 6 ounces non-fat, plain Greek yogurt
  • 1 teaspoon garlic, crushed
  • 1 tablespoon cucumber, minced (with or without skins and/or seeds — English cucumbers work well)
  • 1/2 teaspoon dried dill
  • 1 teaspoon lemon juice
  • 1/2 teaspoon olive oil
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

Directions

  1. Mix all ingredients in small bowl.
  2. Serve with raw vegetables, pita bread or whole-wheat crackers.
