This eight-layer Mexican fiesta dip is truly a party in your mouth. It’s healthy, big on ingredients and flavor, and so easy to make. Scoop it up with baked tortilla chips or layer it onto a whole-grain tortilla or wrap. Enjoy!

Ingredients

  • 1 can refried beans (fat-free or regular)
  • 1 fresh avocado, peeled and cubed
  • 1 (12-ounce) fat-free or light sour cream (option: mix 6 ounces fat-free plus 6 ounces light)
  • 1 (12-ounce) low-sodium canned salsa or fresh salsa
  • 1 packet low-sodium taco seasoning
  • 1 cup 2% or fat-free shredded cheddar cheese
  • 1 bag of shredded lettuce
  • 1 (6-ounce) can of sliced black olives (drain and rinse)
  • *Optional: 1 pound lean ground beef, ground turkey or chicken breast or veggie crumble

Directions

  1. Cook meat or meat substitute and add half packet of taco seasoning. Taste and add remainder of packet if needed.
  2. In a flat square pan, spread the refried beans on the bottom, then layer the following: meat or meat alternative*, avocado, salsa, sour cream, lettuce, cheese and olives.
  3. Serve and enjoy!
